ITC Windsor organises Maharashtrian Food Festival

Committed to curating unique culinary experiences by bringing forth authentic gastronomic preparations that embody the unique culture, ITC Windsor is all set to bring you flavours from the land of Maratha’s by hosting “Platter of Dreams Festival” from 15th July-31st July, 2024. The festival which will be held at the Raj Pavilion, the glass covered all day dining restaurant, with interiors inspired by the century old Lalbagh gardens of Bengaluru.

Savour traditional favourites such as Kothimbir Wadi, Batata Wada, Thalipeeth, Batata chi sukki Bhaji, Vatana Masala, Mutton Sukka, Kharda Chicken, Kolambi rassa / Chicken Rassa Kolambi Bhaat, Varan, Amti, mouth-watering desserts like Shrikhand, Puran Poli.

Elaborating about the festival, Chef Vedant says, “Being a Maharashtrian and growing up eating the local cuisine, Marathi food has always been close to my heart. Indigenous food and the local seasonal ingredients have always inspired me as I grew up seeing my Ajji (grandmother) and my Aai(mother) cooking using ingredients like fresh coconut, Kokum, chilis, fresh green vegetables, etc. The magic of Maharashtrian food lies in its masalas & every home has its own composition of the quantities of spices which gives the masalas their unique flavors, bringing out the uniqueness of each dish in different families. At ITC Windsor, we have tried to bring the essence of the cuisine with two different kinds of thali comprising of the best of Maharashtra”.
