Fairmont Jaipur has announced a major culinary transformation with the complete removal of refined oils from its kitchens, marking a significant shift toward health-forward, conscious dining. Following a month-long evaluation of cooking methods and menu requirements, the hotel has transitioned to desi ghee and mustard oil for Indian cuisine, and olive oil and cold-pressed canola oil for Western, Pan-Asian, and global dishes.
The initiative enhances the nutritional value of meals by incorporating cooking mediums rich in Vitamin E, Vitamin K, and omega fatty acids, aligning with growing wellness preferences among luxury travellers. The hotel is also strengthening regional integration by sourcing pure mustard oil and desi ghee directly from local village communities, supporting rural livelihoods and ensuring superior freshness.
Calling the shift a long-term culinary philosophy, Chef Anal Uniyal, Director of Culinary, said the change improves both flavour and digestibility while staying true to authentic cooking traditions. Fairmont Jaipur is currently updating menus, culinary training, sourcing transparency, and partnerships with local producers to embed this wellness-led approach across operations.
