Welcomhotel Chennai organises Bohri Cuisine Food Festival, exclusively curated by MasterChef Zaber Khan from Mumbai. Zaber Khan is a specialist chef of Bohri cuisine, having honed his skills at the homes of Bohra Muslims.
The Dawoodi Bohra trace their belief system to Yemen, where it evolved from the Fatimid Caliphate. The cuisine of the Bohras is as vast and varied as the culture of the people.
Zaber Khan further explored the nuances of Bohra cuisine in Mumbai and enlarged the repertoire. He brings the best of this delectable cuisine to Earthern Oven at Welcomhotel Chennai till 30th October, 2022.
Legendary Bohri dishes such as Bohri Gosht Biryani, featuring chunks of lamb on the bone, marinated with traditional Bohri spices, cooked on dum with new potatoes, prunes and saffron infused basmati rice, Subz Dum Biryani, a medley of seasonal vegetables layered to saffron infused basmati rice, Bohri Mutton Patti Samosa – Bohri style mutton mince, wrapped in thin pastry and fried, Bohri Vegetable Patti Samosa – Bohri style vegetable mince, wrapped in thin pastry and fried, Russian Vegetable Cutlet – spiced chicken mince, crumbed with vermicelli and fried to perfection are just some of the delicacies on offer.
